Hold on to your coffee cup: One of the worst Brazilian droughts in decades has slashed the supply of coffee beans, which could mean higher prices at the supermarket. Pricier coffee makes smart storage even more critical for the beans you buy. And while Starbucks told us it doesn’t plan any price increases now, other coffee shops may pass on the added costs—yet another incentive to save by brewing your own cup of joe at home. Here are some tips from the experts for storing your favorite coffee and some coffeemakers from Consumer Reports’ latest coffeemaker tests.


1. Stash it in the right place. Whether you brew it now or save it for later, all coffee should be stored away from light, heat, moisture, and odors, which can affect its freshness and taste. If you buy a lot of coffee, divide it into two portions—the one you’re using now and a larger batch stored in an airtight container until you need it. Don’t put coffee in the refrigerator where it can absorb odors from neighboring foods. Instead, keep it in a cool, dark cupboard away from the oven or even an outside wall. Use a ceramic, glass, or nonreactive metal container with an airtight gasket. If you’re a real stickler for fresh-roasted flavor and don’t care about the price, buy coffee in smaller quantities—one or two weeks’ worth—so it doesn’t sit around.


2. Consider freezing it. You can also freeze coffee. Here are some guidelines from Kevin Sinnott, author of “The Art and Craft of Coffee,” creator of CoffeeCon, the Consumer Coffee Festival, and blogger. “It’s always best to keep roasted coffee in bean form until moments before brewing,” Sinnott wrote in an e-mail, whether you freeze them or use them fresh. According to Sinnott, you should be able to keep frozen coffee for up to six months with no obvious flavor or aroma loss, as long as it’s in an air-tight freezer bag. Prefer buying preground coffee? “The freezer is still the best place to forestall staling,” wrote Sinnott, “but a cool, dark, dry place, such as the bottom of a cupboard or closet, is the next best thing.”


3. Get a good coffeemaker. In our coffeemaker tests, drip coffeemakers still brew the best coffee, outperforming today’s fast-growing pods, packs, and pouches for flavor if not convenience. Camp Coffee: What You Must Know About Camp Coffee

I’m an admitted coffee snob. Camp Coffee But even if you’re happy to get your caffeine in the most convenient possible format, damn the taste, so long as the mud is hot, if the potential exists to brew something that offers great taste as well as convenience, you’d probably prefer that to mud. And if the goal is yummy, especially if you’re car camping rather than lugging equipment on your back, just how much are you willing to spend, and how much effort will you put into getting to “good?” Would you spend $150 on Presso’s self-powered espresso maker, shown above (and reviewed below)?


And what exactly is “good coffee” in the first place? A friend of mine thinks Dunkin’ Donuts coffee is great. I disagree. Further, since this is a story about brewing in the backcountry — whether that’s on the tailgate of your pickup for a post-surf/-bike/paddle/bouldering java hit — or five days into a 10-day, 100-mile through-hike, just what do I mean by “convenient?”


Hmmm. So while this review will cover the beans themselves ; Camp Coffee (and their relative goodness) as well as the machines you need to make decent brew in the wilds, it’s important to break down terms before diving straight in.

First, Good.


“Good” coffee to me goes farther than the subjective part of the question: taste. It has to do with the roaster, and their intentions and relations with the farmers and whether said farmers are getting screwed, or are being helped as part of a sustainable program of investment and cooperation so that they can earn a decent livelihood. Coffee doesn’t come from anywhere north of Mexico. It’s grown, largely, in third-world countries around the globe and just as you’re slowly getting to know all the farmers in your own backyard at summer farmers markets and eating local, etc., you should respect the tremendous dedication and brutally hard work of farmers who grow the beans you love.


Also, “good” means good deeds. For happy reasons coffee roasters and store owners are often athletic, adrenaline junkie types, and they tend to like to give back to causes of sustainability in their local communities, and also to sponsor everything from individual athletes to races and events. To the extent possible I tried to connect to as many such smaller players as I could around the country, and to taste their coffee. Camp Coffee, The regionalism was on purpose: My hope is that you can frequent/patronize a coffee roaster/brewer in your own community who appears on this list, posted here. If not, there’s always mail order, as most of these folks will ship. And, you bet, I’m sure I missed more good baristas, brewers and roasters than I nailed. Second, Convenient.


Coffee making can demand both heavy and bulky contraptions. No big deal if you’re car camping, although even there, you don’t want serious mess to clean up, especially if water is scarce. Depending on where you park on the X axis of mess vs. the Y axis of taste/quality will pretty much determine how you define convenience, and this comparison aims to cover the spectrum of ease vs. barista-snob joy.


COFFEE CONTRAPTIONS

The 3.68 lb. Presso is about as convenient to bring into the woods as lugging a large-format camera on a wooden tripod to capture some snappies of your assault on Denali. But the Presso is here for anyone who road trips and simply will not put up with drip coffee as a substitute for espresso. It’s also here because it doesn’t rely on either non-recyclable pods for coffee, or litter-making CO2 canisters to create pressure.


Instead, here’s how it works:


After filling the porta-filter (that thingie with the black handle) with finely ground coffee, (not quite the fineness of climbing chalk, but reasonably close), tamp the grounds with the back of the provided scoop. Go ahead, tamp hard. Wipe away any grounds around the lip of the filter.


Replace the portafilter and thread on tightly.


With the arms of the Presso in the down position, pour just-boiled water into the plastic top of the device.

Lift the arms, wait a few seconds for the water to infuse the coffee, and then lower the arms.


Voila, you have a double shot of espresso, extracted via your own “steam,” as it were. The shocking thing is that while the coffee doesn’t come out with the syrupy richness of a “real” espresso you might get at Stumptown in NYC or PDX, for an espresso extracted in the wilds it’s pretty darned impressive (see photo), although I learned a few quirks that can make it more pleasurable.


First, the biggest limitation of the Presso is that it’s hard to get a really hot shot. So fill the plastic top of the contraption with hot water and let it sit for a few minutes to heat the top element. Dump that water before brewing, replaced by just-boiled water. You should also pre-warm the porta-filter in some hot water in your coffee mug, heating both simultaneously. Also, you can pull a tighter shot by overfilling the Presso to beyond the double-shot line, which adds extra pressure to the extraction, just stop squeezing when you’ve pulled enough of a shot, because the dregs at the bottom of the pull will be a bit watery.

If I’d had a little Italian grandmother rather than a tiny Moldovan one, she would have made coffee with one of these. And this little Bialetti is as close to a personal heirloom as anything I might bequeath to subsequent generations, as it’s sure to outlive me. I’ve had it for nearly 20 years already and it’s survived countless trips to the crag, banging off rocks, falling out of my pack and tumbling down crevices, laughing it all off and only needing an occasional replacement gasket. Mind you, even my little two-cup Bialetti is both too bulky and too heavy (1.1 lbs.) for me to lug on more than an overnight mission hiking, but if I’m going to be parked by a cliff for a day of climbing or doing a multi-pronged mountain bike expedition based out of a single base camp, I don’t hesitate. The coffee? It’s not espresso, but slightly more supercharged than drip. Tip: Don’t over-tamp, as just a little compression is all you need, and don’t go overboard with too-fine a grind.

Primus LiTech Coffee Press

French presses are inherently finicky. It takes some trial and error to get the grind just right, and then if you only use one occasionally for hikes, you forget just what that “right” grind was and your brew comes out as silted as Turkish coffee dregs or as thin as brown water. For this press the sweet spot is coffee ground to about the consistency of fine rock salt, or slightly finer. Trial and error is your friend here: do a few dry runs at home so you’re not bummin‘ on the trail. Also, even if you don’t nail the grind exactly, a little more or less extraction time can save the day: sample after 2-3 minutes, no more, to get the status. This press is also a hair finicky to pour from, but if your grind is right that problem is minimized, or you could bend the spout out a little with a pair of pliers. The bonus with the Primus is that you get a 240-gram, one-liter pot for cooking, just unthread the French-press screen and use the plastic lid on its own for quicker boiling.

Planetary Design Double Shot 2.1

I wouldn’t take this French press deep into the woods with me, because it’s relatively heavy, at .91 pounds. But more, it’s bulky and cannot double as a pot on your stove, like the Primus LiTech. Then again for car camping or brewing at the trailhead/base of the crag, it’s a superb French press. For one thing, you can vary the grind of coffee much more than with most French presses, and although you want to stick with a coarse grind, even slightly finer-ground coffee won’t become a huge issue, as long as you don’t let the coffee over-extract before imbibing. Thumbs up for a secondary screen at the sip spout that prevents any grinds from slipping down your gullet, and for the nifty storage compartment that screws right into the base of the mug and seals tight, so your beans are always right with the press (it’ll hold about four tablespoons of ground coffee). A carabiner hole in the handle is also smart, and this mug insulates all 14 ounces of brew for a good half hour Camp Coffee (although by then your coffee is going to have sat on the grounds for waaaay too long, FYI).

Let’s delve a little deeper into how the French press works, and how you can make the best cup of coffee using this tool.


The French press, also called the cafetiere or coffee press, is a cylinder-shaped beaker (usually glass, but often plastic or steel) with a plunger. The piston of the plunger is made of mesh, allowing liquid to flow through it but not the larger coffee grounds.


With some coffee-brewing methods, the amount of brewed coffee you’re trying to make and the grind size of your beans will affect how quickly the water will flow through the coffee—and how long your total brew time will be. This is true for drip brewing, pourover, and even espresso.


But brew yield, grind size, and brew time are not always inextricably linked. Wetting is the process of fully saturating the coffee grounds. Coffee grounds are made up of cells, and each of those cells holds some of the coffee solids that we want to extract. In fresh coffee, carbon dioxide gas is also trapped in those cells, and wetting releases that gas in a moment we call a “bloom.”


The second step, dissolution, is all about dissolving the solids that will make up the coffee-part of our beverage with our solvent, hot water. The final stage is diffusion: the movement of that coffee-water concentrate out of the grounds into the surrounding liquid. Dissolution and diffusion are typically grouped together by the more common term “extraction,” but I think it’s helpful to look at those as separate processes.

In drip and pourover brewing, the liquid surrounding the coffee grounds is continually replenished with fresh hot water. This is an important factor because the purer the surrounding water, the stronger osmotic pressure drives coffee concentrate out of our grounds, and the more efficient our extraction. On the other hand, the constant flow of clean and hot water over the surface of our coffee grounds extracts those outer surfaces more aggressively, which means we have less time to brew before those outer surfaces are so extracted that they add less-tasty, ‘overextracted’ flavors to our brew. The best coffee brewing is about dialing in our many variables just right to get the best balance of maximizing good flavors and minimizing the less-delicious stuff.

The French press is a pretty different environment for coffee brewing. Drip or pourover brewing is a lot like a convection oven, where the convective heat (in the form of flowing water) speeds up the energy transfer in our little coffee chemistry set. In our low-and-slow French press, you’re not adding more water in as you go, so the energy driving diffusion is decreased, resulting in slower, more gradual brewing. There’s less of the surface-overextraction effect, and the brewing is ultimately a more gentle proposition. Put it all together, and French press brewing is less finicky than most other methods and can result in a more full-flavored brew with a deeper sweetness and syrupy body.


French presses have mesh filters that do a good job of holding back the grounds, but there will be a small quantity of powder-like coffee grounds, called fines, that will make it through the filter and remain suspended in your brew. Don’t let those distract you too much. The fines can give the sensation of more viscosity and richness.


 


French Press Coffee: Try It at Home!


Here’s my basic technique for making great French press coffee. As with all methods of coffee brewing, you’ll need to experiment and tweak the variables a bit, tasting your results before you settle on your ideal settings. The good news is that French press is a good bit more forgiving than the faster brew methods; when you like to order top healthy coffee made with ganoderma lucidum.


Have a watch or stopwatch handy to time your brew. Your smartphone probably has one hidden in its ‘Clock’ app.

1. Start with a very coarse grind, maybe at the coarsest setting on your grinder. The particles should appear somewhere between coarse salt and steelcut oats. Take note of your grind size so you can make adjustments later: grind a little finer next time if your brew was weak, a bit coarser if you’re tasting a lot of unpleasant, dish-raggy, overextracted flavors.


How much: While there’s a maximum amount that your French press will make, there isn’t really a minimum. A good coffee-to-water ratio is between 60-70 grams of coffee per liter of water (a mass ratio between 1:16 and 1:14). Decide how much brewed coffee you want to make and weigh out the right amount of coffee.


2. Get your clean (filtered if you need it) brew water ready. With French press, you’re good to pour your water right off the boil unless you’ve got an insulated (or double-walled) press, in which case you should wait about 30 seconds off of boil. If you’re brewing dark-roasted coffee or decaf, it’s better with water about 10 to 15°F lower.

3. Start your clock and add your water. Some people like to add a little water, stir, and add the rest. It really doesn’t matter. The important part is what you do after you add the water. If you were to just sit back and wait out your brew time now, you’d have an under-extracted brew, because the release of CO2 gas will cause your grounds to rise up and float on top of your water. Remember that first phase “Wetting?” Well, if you don’t have good wetting, you don’t have much of anything that follows, so you should give your coffee and water mix a gentle but thorough stir at about 30 to 45 seconds in. You’ll know you’re good to put the lid on and move on to the next step when most of the coffee has sunk and isn’t floating anymore.


4. This may be very different from what you’ve heard before, but bear with me: shoot for a target brew time between 6 and 8 minutes. “What? I thought it was 3 to 4 minutes!” you might say. You can brew in 3 to 4 minutes if you want, but to get good flavor results, you’d be grinding a lot finer, and you’re not getting the most out of the unique qualities of the French press. Give 6 to 8 minutes a try with the coarse grind, and see if you can dial that in.

5. When you’re ready to stop your brewing, it’s time to plunge. So as I’ve mentioned, French press is a nice, slow, gentle brew. One great way to ruin that niceness would be to violently agitate your coffee grounds, accelerating extraction right at the end when your coffee has already given up the good stuff and the bitter and astringent negative flavors are in danger of taking over. Plunge gently. If you feel the plunger start to get tight, back it up an inch or two and resume plunging. Once you get to the bottom, you’re done!


6. If you’ve plunged your bed down nice and tight, there isn’t a lot of brewing that will happen from this point on, but it’s still ideal to pour off your entire beverage right after plunging to truly stop the brewing process, coffee is quite good for our health, check out 10 Healthy Reason to drink coffee daily. Whether caffeine is actually good for us is a long and much argued debate. Caffeine is commonly used by endurance athletes to permit them to train for longer and aid their recovery afterwards. Scientific studies have also linked it to the prevention of Parkinson’s and Alzheimer’s disease. However, too much caffeine can lead to insomnia, diuresis, gastro-intestinal disturbance, arrhythmia, psychomotor agitation and osteoporosis.


The amount of caffeine in an average cup of coffee (8oz/230ml) varies from between 80 to 150 milligrams. This variation is due to a number of factors. The main difference is caused by from where, and from which variety of plant, the coffee beans are harvested. As caffeine has natural anti-fungal properties, coffee plants grown in environments less favourable to the growth of fungal spores contain less caffeine. At high altitudes, the temperature and humidity is such that spores germinate too slowly to have too much of an effect on a coffee plant. So, generally speaking, the higher the altitude at which a bean is grown, the lower its caffeine content. Also Arabica beans typically have half the amount of caffeine when compared to Robusta beans.


The roasting process alters the amount of caffeine in a coffee bean. A common misconception is that, the darker the roast level, the lower the caffeine content. However, this is not really the case as caffeine changes very little during the roasting process. Caffeine has a very stable structure with a boiling point above 315°C, well above roasting temperatures which rarely exceed 245°C. Nevertheless a small amount of caffeine is lost due to sublimation, where a substance changes directly from a solid state to a gaseous one. This occurs in caffeine at approximately 175°C.


The roasting process dramatically alters a coffee bean. A bean loses weight, mostly due to water evaporation, causing the level of caffeine by weight to increase. However, as beans nearly double in size when roasting, the level of caffeine by volume decreases.
